System Requirements
These extensions must be enabled for OpenCart to install correctly on the web server.
• Web Server (Apache suggested)
• PHP 5.4+
• Database (MySQLi suggested)
Required PHP libraries/modules
• Curl
• ZIP
• Zlib
• GD Library
• Mcrypt
• Mbstrings
• XML
Basic Security Practices
Delete the install folder
Rename admin folder
File permissions
The following files need to be set to 644 or 444 to prevent anyone else from writing to them:
• config.php
• index.php
• admin/config.php
• admin/index.php
• system/startup.php

I get a server error when trying to install opencart 3.02 using Plesk.
Shall it be possible or do I need a cPanel solution?

I never tested Opencart installation in the Plesk infrastructure. As per my best knowledge, cPanel is the perfect solution for Opencart.
